Ebikes are limited to 25 km/h on electric power in the UK, EU, and Australia; while in the US the limit is 38 km/h. Once you reach your speed limit, the rest is up to you. There is nothing to stop you from going faster than those speed limits other than your physical condition to pedal the bike more quickly or if you are going downhill.
Yes, pedaling is what generates the electric power to kick in on your ebike. The pedaling function is what makes an ebike an ebike. Otherwise, it would be classified as a motorbike. Ebikes have a built-in torque sensor in the drivetrain that measures how much force the rider applies to the pedals. This is regulated to match your pedal power with the output from the motor. The design allows you to enjoy a smooth riding experience that doesn't feel like you are being overpowered by the motor and more like you are pedaling with the motor's assistance.
This depends on many different factors, such as the type of bike, the battery capacity, and how you are riding. Physically fit riders often do not use the motor as much, especially on flat surfaces. Battery life will depend on your fitness, ride style, and terrain. Most ebikes have a range of around 60 miles on a single battery charge.
Your ebike purchase includes a power adapter and power cable upon that can be plugged into any 115V outlet (US). AMO e-bikes can be directly charged with the power cable plugging into an outlet. AMO series require 4 hours to full charge.

Yes, they essentially turn into a standard bike and work by using the pedals. You do not have to worry about being stranded out on a trail or road with no battery life because you could simply ride it back as a normal bike. You can also turn off the electric power assistance at any time to conserve battery life.
